New variation on the breakfast casserole  
4 eggs
about an equal volume of milk
a goodly amount of cayenne
garlic powder
a tablespoon or so of caraway seeds

a pack of Ore-Ida hasbrowns with peppers and onions
half a pack of shredded Mexican blend cheese

Beat the eggs, milk, and seasonings together. Mix in potatoes. Mix in cheese. Dump into pan, refrigerate overnight, bake covered at 350 for an hour, then leave uncovered in hot (but turned off) oven another 20 minutes or so.

and if you're a carnivore like me... fry some bacon, shred and throw those in.

Oh, heck yeah -- that would be great with bacon, sausage, or ham. However, we have several vegetarians in my office, so I don't use meat when I make stuff for work. (Thank ghods there are no vegans, though; I'd be lost.)

Yeah.. sounds like breakfast hash they serve around here, usually with blackpudding or devilled kidneys and fried tomatoes. [or all of the above!!]
